  1. First of all wash and soak chickpeas for 6 to 8 hours. Now add chickpeas to a pressure cooker along with cinnamon, cloves, both cardamom, peppercorns, bay leaf and black salt. In a separate pot, add 2 cups of water with tea leaves and boil it. Now strain this tea leaves water in the pressure cooker and cook it for 4 to 5 whistles or until boiled. You can add extra water if needed.
  2. Heat oil in a pan and add onion paste to it. Saute it until light brown in colour and add ginger, garlic and green chillies to it and saute it for 3 to 4 minutes. Now add cumin powder, coriander powder, red chilli powder, garam masala or chhole masala and salt to it and mix everything very well. Cook for 3 to 4 minutes on medium heat.
  3. Now add crushed tomatoes to the onion mix. Add one cup of water and mix everything well and cook it on medium heat until all the water is evaporated and oil start separating from the tomatoes.
  4. Now add boiled chickpea and long with whole spices and the water to the onion tomato gravy. You can add some more water if needed. Mix everything well and cook it for 10 to 15 minutes on medium heat.
  5. Now add kasuri methi and coriander leaves to it and cook for other for 3 to 4 minutes and turn off the heat.
  6. Amritsari chhole masala can be served with bhatura, puri, paratha, roti or rice.
